Why do Cannibals eat people?

In the sense of enjoyment not tradition. I understand that some tribes and religions require to eat others as a sign of respect. Also I don't mean it in a sense of sheer hunger, but in just plain enjoyment. Why would they eat a person instead of food? What is it in their psychology that makes them eat people?
